Courgetti with basil walnut pesto, cheery cherry toms, pinto beans and sunflower seeds

Raw zucchini pasta is one of the most versatile and deliciously high vibration meals you can have. IMG_5088I got a cheap mandolin from the supermarket here in Brazil for 5 reals which is the equivalent of about $2.50. There are so many ways to make courgetti but I went with a twist on a classic Italian style pesto with this one. I had a jar of the dairy free soaked walnut basil pesto I made previously, added some cooked pinto beans that were on hand, some gorgeous fresh yellow cherry tomatoes from the market, thinly sliced spring onions and sunflower seeds. This ensured it was not only super flavourful but also really filling. I don’t mind adding cooked bits and pieces to my raw food dishes, on this occasion the pinto beans. I’m more of a ‘flexitarian’ than follow any one specific or strict diet guideline! You gotta do what you love. Now that raises your vibration.
